You can cancel the dead eye and start again by just clicking the right analog stick... Takes some getting used to, and isn't very efficient but it will help you not kill innocents if that's what you want.

I admit, I dislike the second level most of all, but you don't use it for very long.

Same here =3 I accidentally shot a deer in the hoof and it died, so I got like... 100 bounty.

I moved on to level three, though honestly I've found very little use for the Dead eye so far...Which pisses me off because the stupid Assassin's Gear crap only works for deadeye! WHY COULDN'T THEY VOTE FOR THE SAVVY MERCHANT!?!?! I'm honestly tired of paying 30 bucks for Rifle or Shotgun rounds. It's painful to my wallet damn it!! >.<
