Yikes -- I'm not great at keeping up with this account, it seems! I'm so sorry for anyone who was waiting on some more tasty treats over the past months! Luckily every now and then I do remember that it exists. A few days ago, since it's just past the beginning of summer, I decided to put my strawberry surplus to good use and make some yummy strawberry bars. These can be made as-is for a fresh dessert, or the sugar can be reduced to make them more of a breakfast treat!
Ingredients
2 cups of flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup unsalted butter, cold and cubed
2/3 cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
3 cups chopped strawberries
1/4 cup granulated sugar
1 tablespoon cornstarch
Directions
Heat up the oven to 350 Fahrenheit and put some parchment paper in a square baking dish.
In a bowl, mix flour, baking powder, and salt. Add the cold butter and cut, with a knife or a handheld pastry cutter, until the mix becomes crumbly in consistency. You can also pulse in the food processor.
In a separate bowl, mix brown sugar, egg, and vanilla, and then slowly add in the flour mixture, mixing and folding with a spatula or with your hands. When fully mixed together, the dough should be somewhat crumbly and not too wet, but should hold together when patted with your hand. Put 2/3 of the dough in the bottom of the lined baking dish and pat it down to form a layer.
In another bowl, stir the strawberries (chopped), sugar, and cornstarch together. Pour this mixture over the layer of crust in the baking dish, and then sprinkle/crumble the remaining dough on top. It won't form a full layer but it's okay, some strawberry parts should be peeking out.
Pop it into the oven for 40 to 45 minutes, or until the top is brown and the whole kitchen smells like strawberries. When you remove it from the oven, the strawberries may look a bit wet/soupy -- that's okay, they will thicken as it cools. Allow to cool COMPLETELY (don't be impatient like me) and then refrigerate for 30 or so minutes in the pan before attempting to cut into bars. Or you can also spoon this out into bowls while still warm, top with vanilla ice cream, and enjoy!
