Here's a fun New Year's recipe from Greece, making this the first Greek food I've ever made myself! Say hello to chronopita, a cake made for New Year's Eve or Day with a fun little game baked into it! Keep this recipe handy for the next time New Year's comes along, and before you know it, you and your family can enjoy it too!
Ingredients:
- 3 cups of flour, plus some extra to coat the cake pan with
- 1 cup of butter
- 2 cups + 1 tbsp of sugar
- 5 large eggs
- 1/3 cup of warm milk (about 110 degrees F)
- 1 tbsp of lemon juice
- 2 tsp of vanilla extract
- 2 tsp of baking powder
- 1/3 cup of blanched almond slivers
- Powdered sugar
- Additional butter or margarine to coat the cake pan with
Recipe:
1. Preheat the oven to 325 degrees F and grease and flour a bundt cake pan.
2. In a large bowl, combine the flour and baking powder.
3. In another large bowl, blend together the butter and 2 cups of sugar with an electric mixer on low speed until well combined.
4. Separate 3 of the eggs, adding the yolks and the 2 remaining whole eggs to the butter mixture.
5. Mix in the vanilla, lemon juice and milk.
6. Add the dry ingredients to the mixture. By this point, you'll have to switch from a mixer to a wooden spoon, as the batter will be too thick for the mixer to work with.
7. Whisk the separated egg whites until they start to get foamy. Add the remaining sugar and continue to whip until the whites are slightly stiff.
8. Fold the whipped whites into the batter.
9. Pour the batter into the pan and smooth out the surface with the back of your spoon or spatula.
10. Wrap a large coin in foil and place it in the batter. Press the coin down until completely hidden.
11. Sprinkle the almond slivers on top of the batter.
12. Bake for 40-45 minutes.
13. Take the cake out of the oven and let it sit in the pan for 10-15 minutes, then turn it out onto a cooling rack or serving plate and leave it for another 20 minutes or so.
14. Transfer the cake onto a serving plate if you didn't turn it directly onto one and sprinkle powdered sugar over the top of the cake.
15. Serve warm with breakfast or after dinner on New Year's Eve or New Year's Day.

The person who gets the coin in their piece is said to have good luck for the whole year! If the coin isn't found in the first go, the fun comes from seeing who ends up finding it in the days after New Year's!
