With Kong mostly digested, Anguirus coughs up a mass of hair and softened bones. Even a kaiju wants to avoid being stopped up by a mass of hair, and it's just not worth the effort of digesting it. At least the scientists who will inevitably study it are better off than the ones who will examine the Kong remains that come out of the other end of the spiky kaiju.
